2 chickens, 6 meals, $20

Sunday night we had Roast Chicken for supper (Meal #1). We bought these 2 small roasters at Food Basics on sale for less than $6 each.


We cooked them both at the same time, and cooked extra potatoes and vegetables. We used the extras, as well as the leftover gravy to make Chicken Pot Pie.




We made the Chicken Pot Pie after we ate our supper on Sunday night, as everything was ready and just needed to be assembled. We mixed the chicken and veggies together, poured it into a pie crust and covered it with the leftover gravy. Such an easy way to make Chicken Pot Pie.


Then we covered that with the top layer of pie crust, and popped in the freezer.

I must say, those Pillsbury Pie Crusts are my favourite. Seeing as how I don't make my own, these ones are so simple, they roll out so nicely and taste really good.




This Chicken Pot Pie is perfect for a weeknight dinner (Meal #2). Take it out of the freezer to thaw in the morning and pop it in the oven once you get home. Cook at 400 F for 45 mins or so, until the crust is golden and flaky.



If you're lucky, you'll have some left over for lunch or another supper. (Meal #3)

Once we had made the chicken pot pie on Sunday night, we then made soup stock out of the chicken carcasses.

Such a yucky word - carcasses.

We just threw them in a stock pot, covered them with water and simmered them on the stove for a few hours as we cleaned up, prepared for the week, and watched Desperate Housewives.

After it came to a boil we added some carrot, celery and onion to it for added flavour

as well as some parsley, thyme and a couple bay leaves.


After about 3 hours, we strained out all of the solids. This is the meat that came off the carcasses. You could use this meat for any number of purposes. We chose to use it with the soup base to make soup.

Here is some of the finished soup stock. If while during the boiling process you find you're losing too much liquid, just add more to cover the carcasses again.

We used that base, and the above chicken pieces to make this Vegetable Chowder . (We added the chicken to the recipe).(Meal 4)

But before we made the chicken pot pie or the soup stock or anything, we saved some of the left over chicken for chicken sandwiches. I love chicken sandwiches (Meal 5). Almost more than the Roast Chicken itself. You could also use these to make Quesadillas(Meal 6).


So for about $12, look at how much use we got out of that chicken. I would guess that for everything we made here, we spent about $20 total. You can't beat that! These little chickens come on sale regularly, and when they do, it is definitely worth stocking up on them.

I'm with you on loving chicken sandwiches. what I do is zip it in the food processor until it's almost ground up, then I mix in some mayo and sliced green onions. my kids love it! my younger one - ok, he's not THAT young (15!) has always called them squishy chicken sandwiches.
I also agree with you about the Pillsbury pie crusts - fab! when they go on sale (and especially when they go on sale AND I have coupons) I stock up.
